restaurants. In spring, you may encounter kusksu, a soup made from broad beans and small pasta shapes, often served with soft fresh ġbejniet (Gozo cheese), ricotta and an egg floating in the middle. Soppa tal-armla means ‘widow’s soup’ (probably named because of its inexpensive ingredients). It’s traditionally made only with components that are either green or white: a tasty mix of cauliflower, spinach, endive and peas, with protein provided by a poached egg, ġbejniet and a lump of ricotta.
